Delicious and crispy puffs made from mashed potatoes, cheese, and Greek yogurt for a fluffy texture.

- 1/2 teaspoon garlic granules
- 1/4 teaspoon finely ground black pepper
- 2 tablespoons minced scallions (optional)
- 2 large whole eggs
- 1/2 teaspoon baking powder
- 1/4 cup finely grated Parmesan cheese
- 1/2 teaspoon salt (to preference)
- 2 cups prepared mashed potatoes (completely cooled)
- 1 cup shredded cheddar or mixed cheeses
- 1/4 cup plain Greek yogurt or sour cream
Instructions
- Preheat the oven to 400°F (200°C) and prepare a 12-well muffin tin.
- Combine the mashed potatoes, eggs, cheddar cheese, Parmesan, Greek yogurt or sour cream, and scallions in a mixing bowl.
- Incorporate the garlic powder, salt, pepper, and baking powder into the mixture and mix thoroughly.
- Distribute the mixture among the muffin tin wells, filling each about three-quarters full.
- Transfer the muffin tin to the oven and bake for 20 to 25 minutes until golden and crispy.
- Allow the puffs to rest for 5 minutes in the tin before removing and serving warm with a dipping sauce.
Notes
Do not skip cooling the mashed potatoes for the best texture, and monitor baking time closely.
