Description

Delicious and crispy puffs made from mashed potatoes, cheese, and Greek yogurt for a fluffy texture.


Ingredients

  • 1/2 teaspoon garlic granules
  • 1/4 teaspoon finely ground black pepper
  • 2 tablespoons minced scallions (optional)
  • 2 large whole eggs
  • 1/2 teaspoon baking powder
  • 1/4 cup finely grated Parmesan cheese
  • 1/2 teaspoon salt (to preference)
  • 2 cups prepared mashed potatoes (completely cooled)
  • 1 cup shredded cheddar or mixed cheeses
  • 1/4 cup plain Greek yogurt or sour cream

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a 12-well muffin tin.
  2. Combine the mashed potatoes, eggs, cheddar cheese, Parmesan, Greek yogurt or sour cream, and scallions in a mixing bowl.
  3. Incorporate the garlic powder, salt, pepper, and baking powder into the mixture and mix thoroughly.
  4. Distribute the mixture among the muffin tin wells, filling each about three-quarters full.
  5. Transfer the muffin tin to the oven and bake for 20 to 25 minutes until golden and crispy.
  6. Allow the puffs to rest for 5 minutes in the tin before removing and serving warm with a dipping sauce.

Notes

Do not skip cooling the mashed potatoes for the best texture, and monitor baking time closely.
