- 2 medium zucchinis
- 1 cup panko breadcrumbs

- 1 teaspoon onion powder

- 1/2 cup all-purpose flour
- Cooking spray or olive oil for drizzling
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the zucchinis and cut off the ends, then slice into sticks, about 1/4 inch thick.
- Add flour to one shallow dish, and beat the eggs in another dish.
- Mix the panko breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper in a third dish.
- Coat each zucchini stick in flour, then dip it into the egg, followed by rolling in the panko mixture.
- Line a baking sheet with parchment and arrange the coated zucchini fries in a single layer, lightly spray or drizzle oil on top.
- Bake for 20-25 minutes, flipping halfway through for even cooking.
- Remove from the oven, let cool for a few minutes, and serve with dipping sauce.
