Ingredients

  • Boneless, skinless chicken breasts
  • Freshly grated Parmesan cheese
  • Panko breadcrumbs
  • Italian seasoning
  • 2 eggs
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound the chicken to an even thickness.
  3. In one bowl, whisk together the eggs for the egg wash.
  4. In another bowl, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  5. Coat each chicken cutlet in the egg mixture, then thoroughly with the breadcrumb mixture.
  6. Line a baking sheet with parchment paper or lightly grease it.
  7. Arrange the coated chicken cutlets on the sheet without overlapping.
