- Freshly grated Parmesan cheese
- Panko breadcrumbs
- Italian seasoning
- 2 eggs
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Pound the chicken to an even thickness.
- In one bowl, whisk together the eggs for the egg wash.
- In another bowl, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and pepper.
- Coat each chicken cutlet in the egg mixture, then thoroughly with the breadcrumb mixture.
- Line a baking sheet with parchment paper or lightly grease it.
- Arrange the coated chicken cutlets on the sheet without overlapping.
- Drizzle olive oil over the top of each cutlet.
- Bake for 20-25 minutes, flipping halfway through.
- Check doneness with a meat thermometer (165°F/75°C).
- Let the chicken rest for a few minutes before serving.
