- 12 egg roll wrappers
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup pizza sauce
- 1/4 cup mini pepperoni, chopped
- 1 tablespoon chopped fresh basil (optional)
- Cooking spray
Instructions
- In a medium bowl, combine shredded mozzarella cheese, grated Parmesan cheese, chopped pepperoni, and chopped basil (if using).
- Spoon about 2 tablespoons of the cheese and pepperoni mixture onto the center of each egg roll wrapper.
- Add about 1 teaspoon of pizza sauce over the cheese mixture on each wrapper.
- Fold the bottom edge of the wrapper over the filling. Fold in the sides to seal.
- Roll up tightly to form an egg roll. Moisten the top edge with water to seal it shut.
- Preheat your air fryer to 400°F (200°C).
- Lightly spray the egg rolls with cooking spray to help them crisp up.
- Place the egg rolls in the air fryer basket in a single layer.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with extra pizza sauce for dipping.
Notes
Avoid overfilling the egg rolls to prevent them from bursting during cooking. For added flavor, try different cheese or toppings.
