Description

Enjoy a crunchy and flavorful cod fillet with a rich Parmesan and panko crust, made effortlessly in the air fryer.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Pat cod fillets dry completely.
  2. Brush lightly with olive oil.
  3. Season both sides with salt and pepper.
  4. In a shallow dish, mix Parmesan, panko, lemon zest, garlic powder, and a pinch of salt. Stir until evenly combined.
  5. Press each cod fillet into the crust mixture to coat all sides. Press gently so the crust adheres.
  6. Preheat air fryer to 400°F.
  7. Place coated cod fillets in a single layer.
  8. Cook for 10–12 minutes until the crust is golden and fish flakes easily.
  9. Mix melted butter with lemon juice.
  10. Drizzle over cod immediately after cooking.
  11. Top with chopped parsley.
  12. Serve with lemon wedges.

Notes

Make sure to pat the fish dry to prevent sogginess, and be cautious not to overcrowd the air fryer.
