- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- ¾ cup panko breadcrumbs
- 1 teaspoon lemon zest
- ½ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter, melted
- 1 tablespoon fresh parsley, chopped
- 1 lemon, cut into wedges (for serving)
Instructions
- Pat cod fillets dry completely.
- Brush lightly with olive oil.
- Season both sides with salt and pepper.
- In a shallow dish, mix Parmesan, panko, lemon zest, garlic powder, and a pinch of salt. Stir until evenly combined.
- Press each cod fillet into the crust mixture to coat all sides. Press gently so the crust adheres.
- Preheat air fryer to 400°F.
- Place coated cod fillets in a single layer.
- Cook for 10–12 minutes until the crust is golden and fish flakes easily.
- Mix melted butter with lemon juice.
- Drizzle over cod immediately after cooking.
- Top with chopped parsley.
- Serve with lemon wedges.
Notes
Make sure to pat the fish dry to prevent sogginess, and be cautious not to overcrowd the air fryer.
