Description

Ingredients

  • ¾ cup self-rising flour
  • 1 large egg
  • 3½ ounces feta cheese, grated
  • 1¾ ounces young provolone, grated
  • 1 cup oil, for frying
  • 2/3 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped (for tzatziki)
  • 1 medium cucumber, grated and squeezed
  • 1 garlic clove, crushed (for tzatziki)
  • 1 tablespoon lemon juice
  • ½ teaspoon salt (for tzatziki)

Instructions

  1. Prepare the Zucchini: Grate the zucchini and squeeze out as much liquid as possible. Set aside.
  2. Mix the Ingredients: In a large bowl, combine the zucchini, red onion, garlic, dill, parsley, salt, black pepper, flour, egg, feta, and provolone. Stir until well combined.
  3. Heat the Oil: In a skillet, heat the oil over medium-high heat until ready.
  4. Fry the Fritters: Drop spoonfuls of the mixture into the hot oil, flatten slightly, and fry for 2-3 minutes on each side until golden brown.
  5. Drain the Fritters: Transfer to a plate lined with paper towels to absorb excess oil.
  6. Make the Tzatziki: In a bowl, mix Greek yogurt, dill, cucumber, garlic, lemon juice, and salt. Stir and chill until serving.
  7. Serve: Enjoy the fritters hot with tzatziki on the side.

Ensure to squeeze out the moisture from the zucchini to avoid sogginess. Fry in batches to keep the oil temperature consistent.
