- 1 pound smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 cans (15 ounces each) red beans, rinsed and drained
- 4 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 3 cups cooked long-grain rice
- Chopped green onions for garnish
Instructions
- In a large pot, cook the sliced sausage over medium heat until browned.
- Add the onion, bell pepper, celery, and garlic, and sauté until the vegetables are soft.
- Stir in the red beans, chicken broth, bay leaves, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes, stirring occasionally.
- Remove bay leaves before serving.
- Spoon the mixture over cooked long-grain rice and garnish with chopped green onions.
Notes
For added flavor, use high-quality smoked sausage or Andouille. Adjust seasoning to taste.
