Description

A hearty and flavorful dish showcasing the essence of Southern cooking, made with smoked sausage and red beans.


Ingredients

  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 cans (15 ounces each) red beans, rinsed and drained
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 cups cooked long-grain rice
  • Chopped green onions for garnish

Instructions

  1. In a large pot, cook the sliced sausage over medium heat until browned.
  2. Add the onion, bell pepper, celery, and garlic, and sauté until the vegetables are soft.
  3. Stir in the red beans, chicken broth, bay leaves, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 30 minutes, stirring occasionally.
  5. Remove bay leaves before serving.
  6. Spoon the mixture over cooked long-grain rice and garnish with chopped green onions.

Notes

For added flavor, use high-quality smoked sausage or Andouille. Adjust seasoning to taste.
