Ingredients

  • 1 cup raw cashews
  • 1 cup sun-dried tomatoes (soaked if dry)
  • 2 cloves garlic
  • 1 cup vegetable broth or water
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Vegan Parmesan for serving
  • Red pepper flakes for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a blender, combine the soaked cashews, sun-dried tomatoes, garlic, and vegetable broth. Blend until smooth and creamy.
  3. Pour the creamy sauce into a pan over medium heat. Warm through, stirring occasionally, and season with salt and pepper to taste.
  4. Toss the cooked pasta in the creamy sauce until well-coated and heated through.
  5. Serve warm, garnished with fresh basil, vegan parmesan, and red pepper flakes.
