- 1 cup raw cashews
- 1 cup sun-dried tomatoes (soaked if dry)
- 2 cloves garlic
- 1 cup vegetable broth or water
- Salt and pepper to taste
- Fresh basil for garnish
- Vegan Parmesan for serving
- Red pepper flakes for garnish
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a blender, combine the soaked cashews, sun-dried tomatoes, garlic, and vegetable broth. Blend until smooth and creamy.
- Pour the creamy sauce into a pan over medium heat. Warm through, stirring occasionally, and season with salt and pepper to taste.
- Toss the cooked pasta in the creamy sauce until well-coated and heated through.
- Serve warm, garnished with fresh basil, vegan parmesan, and red pepper flakes.
Notes
For best results, soak cashews for 2-4 hours or overnight. Adjust sauce thickness with additional broth or water as needed.
