- 1 pound shrimp, peeled and deveined
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup artichokes, chopped
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish
- Fresh basil for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
- Stir in the sun-dried tomatoes, artichokes, and fresh spinach, cooking until the spinach wilts.
- Pour in the heavy cream, and season with salt and pepper. Stir to combine and let simmer for 3-5 minutes until sauce thickens.
- Serve hot, garnished with grated Parmesan cheese and fresh basil.
Notes
Do not overcook the shrimp. Use fresh ingredients for the best flavor.
