Description

A rich and creamy shrimp dish bursting with flavor from sun-dried tomatoes, artichokes, and fresh spinach.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup artichokes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
  4. Stir in the sun-dried tomatoes, artichokes, and fresh spinach, cooking until the spinach wilts.
  5. Pour in the heavy cream, and season with salt and pepper. Stir to combine and let simmer for 3-5 minutes until sauce thickens.
  6. Serve hot, garnished with grated Parmesan cheese and fresh basil.

Notes

Do not overcook the shrimp. Use fresh ingredients for the best flavor.
