- 1 pound boneless, skinless chicken breasts (pounded to an even thickness)
- 8 ounces penne or fettuccine pasta
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt (divided)
- 1/2 teaspoon black pepper
- 1/2 cup yellow onion (finely chopped)
- 4 cloves garlic (minced)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes in oil (drained and chopped)
- 3/4 cup Parmesan cheese (freshly grated)
- 2 cups fresh spinach (packed)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- While the pasta cooks, season the chicken breasts with Italian seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes on each side, until golden and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook for 2-3 minutes until soft. Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Bring to a simmer.
- Reduce the heat to medium-low. Stir in the heavy cream and sun-dried tomatoes. Simmer gently for 3-4 minutes to thicken the sauce.
- Stir in grated Parmesan cheese until the sauce is smooth and creamy.
- Slice the rested chicken. Add the cooked pasta, sliced chicken, and fresh spinach to the skillet. Stir until the spinach wilts and everything is coated in the sauce. If needed, add a splash of reserved pasta water to reach the desired consistency.
- Serve immediately, garnished with extra Parmesan if desired.
