Ingredients

  • 1 lb ground beef
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Red pepper flakes, for garnish (optional)
  • Fresh herbs, like basil or parsley (optional)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
  3. Stir in garlic and sun-dried tomatoes; cook for 1-2 minutes.
  4. Add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is creamy.
  5. Add the spinach and cooked pasta; toss to combine until the spinach is wilted.
  6. Season with salt, pepper, and red pepper flakes, if using.
  7. Serve immediately, garnished with fresh herbs if desired.
