- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound large shrimp, peeled and deveined
- 9 ounces cheese tortellini (fresh or refrigerated)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 3/4 cup grated parmesan cheese
- 1 cup fresh spinach (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the shrimp for 1-2 minutes on each side until they turn pink, and remove from skillet.
- Prepare the sauce by adding butter to the skillet and letting it melt, then sauté the minced garlic.
- Make the cream sauce by pouring in the heavy cream and simmering, then add parmesan cheese.
- Cook the cheese tortellini according to package instructions, drain, and set aside.
- Combine the cooked tortellini and spinach with the sauce.
- Add the cooked shrimp back to the skillet and heat everything together.
- Serve immediately, garnished with basil or parsley.
