- 1 lb (450 g) shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Cook the pasta according to package instructions. Drain it and set it aside.
- Sauté the garlic: In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the skillet, sautéing for 1-2 minutes until fragrant.
- Cook the shrimp until they turn pink and are cooked through, about 3-4 minutes.
- Mix in the chopped sun-dried tomatoes and let them cook with the shrimp for another minute.
- Add the heavy cream and bring the mixture to a gentle simmer.
- Add fresh spinach, letting it cook until it wilts.
- Combine the cooked pasta and sprinkle the grated Parmesan cheese over it. Mix everything until well combined.
- Season the dish with salt and pepper to taste.
- Garnish with fresh basil leaves before serving.
Notes
For a lighter version, consider substituting half-and-half or whole milk for some of the heavy cream. Use fresh ingredients for better flavor.
