  • 1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
  • 1 cup heavy cream (can substitute with half-and-half or dairy-free cream)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese, grated (plus additional for serving)
  • Salt and pepper to taste
  • Crushed red pepper flakes, optional

Instructions

  1. Boil the pasta in salted water until al dente, usually about 8-10 minutes, reserving 1/2 cup of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium heat and sauté minced garlic for about 30 seconds until fragrant.
  3. Add fresh spinach and stir until wilted, about 2-3 minutes.
  4. Incorporate chopped sun-dried tomatoes and cook for an additional 1-2 minutes.
  5. Reduce heat to low and slowly add the heavy cream, stirring until slightly thickened, about 2-3 minutes.
  6. Add the cooked spaghetti, tossing gently to combine, and stir in grated Parmesan cheese. Season with salt, pepper, and optional crushed red pepper flakes.
  7. Serve immediately, garnished with additional Parmesan cheese if desired.
