Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and sear until golden brown on both sides, about 5-6 minutes per side. Once cooked, remove the chicken and set it aside.
  2. Add the chopped onion and minced garlic to the same skillet. Sauté until softened and aromatic.
  3. Stir in the rice with the onion and garlic. Pour in the chicken broth and heavy cream, stirring gently to combine.
  4. Return the chicken to the skillet, nestling it into the rice mixture. Bring to a simmer, cover, and reduce heat to low.
  5. Cook for 18-20 minutes, or until the rice is tender and the chicken is fully cooked. Adjust the liquid if necessary for the rice to cook properly.
  6. Serve hot, optionally garnished with chopped parsley.
