- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and sear until golden brown on both sides, about 5-6 minutes per side. Once cooked, remove the chicken and set it aside.
- Add the chopped onion and minced garlic to the same skillet. Sauté until softened and aromatic.
- Stir in the rice with the onion and garlic. Pour in the chicken broth and heavy cream, stirring gently to combine.
- Return the chicken to the skillet, nestling it into the rice mixture. Bring to a simmer, cover, and reduce heat to low.
- Cook for 18-20 minutes, or until the rice is tender and the chicken is fully cooked. Adjust the liquid if necessary for the rice to cook properly.
- Serve hot, optionally garnished with chopped parsley.
