Ingredients

  • 12 ounces pasta (penne, rotini, or bowtie)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish
  • Optional: Red pepper flakes for a kick
  • Optional: Squeeze of lemon for brightness

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. Prepare the Sausage: Slice 12 ounces of smoked sausage into thin rounds.
  3. Cook the Sausage: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sausage slices and cook until browned and crispy, about 4-5 minutes. Remove from skillet and set aside.
  4. Sauté the Garlic: In the same skillet, add 2 minced garlic cloves. Sauté for about 1 minute until fragrant.
  5. Make the Sauce: Reduce heat to low, add 1 cup of heavy cream and 1/2 cup of chicken broth to the skillet. Stir and let simmer for 2-3 minutes.
  6. Add the Cheese: Gradually stir in 1 cup of grated Parmesan cheese until it melts and the sauce is smooth.
  7. Combine Everything: Add the cooked pasta and sausage to the skillet. Toss to coat the pasta in sauce. If too thick, add reserved pasta water to reach desired consistency.
  8. Season and Serve: Season with salt and pepper as needed, garnish with parsley and red pepper flakes, and serve immediately.
