- 12 ounces smoked sausage (beef, pork, chicken, or turkey)
- 12 ounces pasta (penne, rotini, or bowtie)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
- Optional: Red pepper flakes for a kick
- Optional: Squeeze of lemon for brightness
Instructions
- Boil the Pasta: Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Prepare the Sausage: Slice 12 ounces of smoked sausage into thin rounds.
- Cook the Sausage: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sausage slices and cook until browned and crispy, about 4-5 minutes. Remove from skillet and set aside.
- Sauté the Garlic: In the same skillet, add 2 minced garlic cloves. Sauté for about 1 minute until fragrant.
- Make the Sauce: Reduce heat to low, add 1 cup of heavy cream and 1/2 cup of chicken broth to the skillet. Stir and let simmer for 2-3 minutes.
- Add the Cheese: Gradually stir in 1 cup of grated Parmesan cheese until it melts and the sauce is smooth.
- Combine Everything: Add the cooked pasta and sausage to the skillet. Toss to coat the pasta in sauce. If too thick, add reserved pasta water to reach desired consistency.
- Season and Serve: Season with salt and pepper as needed, garnish with parsley and red pepper flakes, and serve immediately.
