Description

A rich and creamy seafood chili that combines shrimp, crab, and lobster with beans and spices to create a warm and satisfying meal.


Ingredients

  • 2 garlic cloves, minced
  • 1 cup chopped onion
  • 1 cup shredded Colby and Monterey Jack cheese
  • 3 ounces cream cheese
  • 5 ounces lump crab meat
  • 5 ounces lobster meat
  • 1 pound shrimp, peeled and deveined
  • 2 cups low-sodium chicken broth
  • 1 can (15.5 ounces) Great Northern beans, drained and rinsed
  • 1 can (15.5 ounces) black beans, drained and rinsed
  • 1 can (15.5 ounces) diced tomatoes with chilis, drained
  • 1/2 cup frozen whole kernel corn
  • Seafood seasoning, to taste
  • Chili powder, to taste
  • Cumin, to taste
  • Red cayenne pepper, to taste
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and chopped onion, sauté until the onion becomes translucent, about 3 to 4 minutes.
  3. Add the shrimp, crab meat, and lobster meat. Cook gently, stirring until the shrimp turns pink and opaque, about 3 minutes.
  4. Pour in the chicken broth, Great Northern beans, black beans, diced tomatoes with chilis, and the frozen corn. Stir well to combine all the ingredients.
  5. Add seafood seasoning, chili powder, cumin, red cayenne pepper, salt, and black pepper. Stir and bring the mixture to a gentle simmer. Let it cook uncovered for about 10 minutes, stirring occasionally.
  6. Reduce the heat to low, stir in the cream cheese and shredded Colby and Monterey Jack cheese until it melts completely, creating a creamy texture. Heat through without boiling.
  7. Ladle the hot chili into bowls and serve immediately.

Notes

Ensure not to overcook the shrimp. You can adjust the spices according to your preference. This chili can be stored in the refrigerator for up to 3-4 days or frozen for 2-3 months.
