Ingredients

  • 1 lb Italian sausage
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese, for serving

Instructions

  1. Cook the rigatoni pasta according to package instructions until al dente, then drain well.
  2. In a large pan, heat olive oil over medium heat. Add Italian sausage and cook until browned and fully cooked, breaking it apart as it cooks.
  3. Add minced garlic to the pan and stir for about a minute until fragrant. Then add fresh spinach and cook until wilted.
  4. Stir in canned diced tomatoes and heavy cream. Season with salt and pepper, then let simmer for a few minutes.
  5. Add the cooked rigatoni to the pan and toss to coat the pasta in the creamy sauce.
  6. Plate the dish hot and garnish generously with grated Parmesan cheese.
