- 12 oz rigatoni pasta
- 1 lb Italian sausage
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 14.5 oz canned diced tomatoes
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese, for serving
Instructions
- Cook the rigatoni pasta according to package instructions until al dente, then drain well.
- In a large pan, heat olive oil over medium heat. Add Italian sausage and cook until browned and fully cooked, breaking it apart as it cooks.
- Add minced garlic to the pan and stir for about a minute until fragrant. Then add fresh spinach and cook until wilted.
- Stir in canned diced tomatoes and heavy cream. Season with salt and pepper, then let simmer for a few minutes.
- Add the cooked rigatoni to the pan and toss to coat the pasta in the creamy sauce.
- Plate the dish hot and garnish generously with grated Parmesan cheese.
Notes
For a vegetarian option, substitute Italian sausage with plant-based sausage or mushrooms. Add more vegetables like bell peppers or zucchini for additional flavor.
