- 4 large russet or golden potatoes
- 2 ½ cups chicken stock
- ¾ cup heavy whipping cream
- 8 slices of bacon, cooked and crumbled
- Cheese (for topping)
- Green onions (for topping)
Instructions
- Peel and cube the potatoes.
- Bring the chicken stock to a boil and add the potatoes. Cook until tender, about 15-20 minutes.
- Use a potato masher to partially mash them for a chunky texture.
- Stir in the heavy whipping cream and mix well.
- Add the crumbled bacon and stir to combine.
- Season with salt and pepper to taste.
- Serve hot, topped with cheese and green onions.
Notes
For a lighter version, substitute some heavy whipping cream with milk or half-and-half.
