Description

A delightful creamy pesto shrimp gnocchi dish that pairs tender shrimp with rich basil pesto for a quick and easy meal.


Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 1 pkg gnocchi
  • 1 cup basil pesto
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Heat olive oil over medium heat in a large pan.
  2. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  3. Remove shrimp from the pan and set aside.
  4. Add gnocchi to the same pan and cook according to package instructions.
  5. Once the gnocchi is cooked, add heavy cream and basil pesto to the pan.
  6. Stir until combined and creamy.
  7. Return the shrimp to the pan and mix well.
  8. Season with salt and pepper.
  9. Serve hot, topped with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator. Reheat with a splash of water or additional cream to restore consistency.
