A delightful creamy pesto shrimp gnocchi dish that pairs tender shrimp with rich basil pesto for a quick and easy meal.

- 1 lb shrimp, peeled and deveined
- 1 pkg gnocchi
- 1 cup basil pesto
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Heat olive oil over medium heat in a large pan.
- Add shrimp and cook until pink and opaque, about 3-4 minutes.
- Remove shrimp from the pan and set aside.
- Add gnocchi to the same pan and cook according to package instructions.
- Once the gnocchi is cooked, add heavy cream and basil pesto to the pan.
- Stir until combined and creamy.
- Return the shrimp to the pan and mix well.
- Season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
Store leftovers in an airtight container in the refrigerator. Reheat with a splash of water or additional cream to restore consistency.
