- 1 pound gnocchi
- 2 cups cooked rotisserie chicken, shredded
- 1 cup pesto sauce
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for greasing
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a large pot, cook the gnocchi according to package instructions until they float to the top. Drain and set aside.
- In a large mixing bowl, combine the cooked gnocchi, shredded chicken, pesto sauce, heavy cream, salt, and pepper. Mix until well combined.
- Transfer the mixture to the prepared baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve warm.
Notes
To store leftovers, cool completely and place in an airtight container. Can be refrigerated for up to 3 days or frozen for up to 2 months.
