Description

A comforting dish featuring soft gnocchi, tender chicken, and a rich creamy pesto sauce.


Ingredients

  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup pesto sauce
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for greasing
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a large pot, cook the gnocchi according to package instructions until they float to the top. Drain and set aside.
  3. In a large mixing bowl, combine the cooked gnocchi, shredded chicken, pesto sauce, heavy cream, salt, and pepper. Mix until well combined.
  4. Transfer the mixture to the prepared baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  5. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and golden brown.
  6. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve warm.

Notes

To store leftovers, cool completely and place in an airtight container. Can be refrigerated for up to 3 days or frozen for up to 2 months.
