Description

A delightful combination of crispy pancetta, sweet peas, and a rich creamy sauce, wrapped around tender pasta—perfect for any occasion.


Ingredients

  • 12 ounces pasta (such as fettuccine or linguine)
  • 4 ounces pancetta, diced
  • 1 cup frozen peas, thawed
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of cooking water before draining.
  2. In a skillet, heat olive oil over medium heat. Add pancetta and sauté until crispy, about 5-7 minutes.
  3. Add minced garlic to the skillet and stir for another 1-2 minutes until fragrant.
  4. Reduce heat to low, add heavy cream, and simmer for 2-3 minutes until slightly thickened.
  5. Stir in thawed peas and cook for an additional 2-3 minutes, adding reserved pasta water for desired consistency.
  6. Add drained pasta to skillet and toss to coat with sauce.
  7. Gradually mix in Parmesan cheese until melted and well combined. Season with salt and pepper as needed.
  8. Remove from heat, serve immediately, and garnish with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator and reheat with a splash of cream or reserved pasta water to regain creaminess. Enjoy within 2 to 3 days.
