- 12 ounces pasta (such as fettuccine or linguine)
- 4 ounces pancetta, diced
- 1 cup frozen peas, thawed
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of cooking water before draining.
- In a skillet, heat olive oil over medium heat. Add pancetta and sauté until crispy, about 5-7 minutes.
- Add minced garlic to the skillet and stir for another 1-2 minutes until fragrant.
- Reduce heat to low, add heavy cream, and simmer for 2-3 minutes until slightly thickened.
- Stir in thawed peas and cook for an additional 2-3 minutes, adding reserved pasta water for desired consistency.
- Add drained pasta to skillet and toss to coat with sauce.
- Gradually mix in Parmesan cheese until melted and well combined. Season with salt and pepper as needed.
- Remove from heat, serve immediately, and garnish with chopped parsley.
Notes
Store leftovers in an airtight container in the refrigerator and reheat with a splash of cream or reserved pasta water to regain creaminess. Enjoy within 2 to 3 days.
