- 8 oz bowtie pasta
- 2 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook the bowtie pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side, or until cooked through. Remove from skillet and slice.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add roasted red peppers, heavy cream, and Parmesan cheese to the skillet. Stir to combine and let it simmer for 3-4 minutes.
- Add the cooked bowtie pasta and sliced chicken to the sauce, tossing to coat evenly. Cook for an additional 2 minutes to heat through.
- Serve hot, garnished with fresh parsley.

Don’t overcook the chicken and use fresh ingredients for the best taste.
