- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper. Add chicken to the skillet and cook until golden brown on both sides and fully cooked, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are soft, about 4-5 minutes.
- Stir in the heavy cream and thyme, bringing the mixture to a simmer. Cook until the sauce thickens slightly, about 3-4 minutes.
- Return the chicken to the skillet, coating it with the mushroom sauce. Cook for an additional 2 minutes to heat through.
- Garnish with fresh parsley and serve with mashed potatoes, pasta, or roasted vegetables.
