- 1 yellow onion, diced
- 6–8 cloves garlic, minced (to taste)
- 1 t red pepper flakes (to taste)
- 1 t Italian seasoning
- Salt and pepper (to taste)
- 1 t smoked paprika
- 1 lb grass-fed ground beef
- 2–3 T tomato paste
- 3 cups beef broth
- 1 cup heavy cream
- 1 lb medium pasta shells
- 4 oz freshly shredded sharp cheddar cheese
- Fresh chives (to garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the minced garlic and red pepper flakes; cook for another minute.
- Add the ground beef, cooking until browned.
- Season with Italian seasoning, salt, pepper, and smoked paprika.
- Stir in the tomato paste and beef broth, bringing the mixture to a simmer.
- Meanwhile, cook the pasta shells according to package instructions and drain.
- Once the sauce has thickened slightly, stir in the heavy cream and cooked pasta shells.
- Mix in the shredded cheddar cheese until melted.
- Serve garnished with fresh chives.
Notes
For a lighter version, you can use milk or a dairy-free alternative instead of heavy cream.
