- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup Irish whiskey
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.
- Pour in the Irish whiskey, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes.
- Add the heavy cream and thyme, stirring to combine. Simmer on low for about 5 minutes until thickened.
- Return the chicken to the skillet, coating it in the sauce. Cook for an additional 2-3 minutes to heat through.
- Garnish with chopped parsley and serve hot.
