- 1 pound fresh green beans, trimmed and blanched
- 8 ounces mushrooms, sliced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 cups vegetable or chicken stock (low-sodium preferred)
- 2 tablespoons flour
- 2 tablespoons butter or olive oil
- 1 cup fried shallots
- 1/2 cup grated parmesan cheese
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Blanch the green beans in salted boiling water for about 4 minutes, then transfer to ice water and drain well.
- Sauté the mushrooms in melted butter or olive oil until soft, then add onion and garlic powders.
- Sprinkle flour over the mushrooms and stir for 1 minute. Gradually whisk in the stock until the sauce thickens.
- Combine the blanched green beans with the sauce, seasoning with salt and pepper.
- Transfer the mixture to the greased baking dish.
- Top with fried shallots and grated parmesan cheese.
- Bake for 15-20 minutes until bubbly and golden brown.
Notes
Store leftovers in the refrigerator for up to 3-4 days. Reheat in the oven or microwave.
