- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until soft, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the broccoli florets and vegetable broth; bring to a boil.
- Once boiling, reduce the heat and simmer until the broccoli is tender, about 15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, optionally topped with grated cheese.
