- 1 lb lean beef
- 1 can black beans
- 1 can kidney beans
- 1 can corn
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup cream or Greek yogurt
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Brown the lean beef in a large pot over medium heat until fully cooked.
- Drain any excess fat.
- Add the black beans, kidney beans, corn, diced tomatoes, and chicken broth to the pot.
- Stir in the taco seasoning and bring the mixture to a boil.
- Reduce heat and let it simmer for 15-20 minutes to allow flavors to meld.
- Stir in cream or Greek yogurt until well combined and heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped cilantro.
