Description

Ingredients

  • 1 lb lean beef
  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup cream or Greek yogurt
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Brown the lean beef in a large pot over medium heat until fully cooked.
  2. Drain any excess fat.
  3. Add the black beans, kidney beans, corn, diced tomatoes, and chicken broth to the pot.
  4. Stir in the taco seasoning and bring the mixture to a boil.
  5. Reduce heat and let it simmer for 15-20 minutes to allow flavors to meld.
  6. Stir in cream or Greek yogurt until well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped cilantro.
