  • 1 ½ cups chicken broth/stock
  • 16 ounces fresh gnocchi
  • 2 large eggs, room temperature
  • Âľ cup finely grated Parmesan cheese

Instructions

  1. Heat olive oil in a deep pan over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, and garlic powder, and cook until golden and fully cooked.
  3. Deglaze the pan with chicken broth, scraping up any bits from the bottom.
  4. Add gnocchi and cook for 3-4 minutes, stirring frequently.
  5. Reduce heat to very low; if necessary, add more broth to prevent sticking.
  6. In a small bowl, whisk eggs and Parmesan cheese; season with salt and pepper.
  7. Slowly pour the egg mixture over the gnocchi while stirring continuously to form a creamy sauce.
  8. Remove from heat and serve immediately, garnished with additional Parmesan cheese if desired.
