- 16 ounces fresh gnocchi
- 2 large eggs, room temperature
- Âľ cup finely grated Parmesan cheese
Instructions
- Heat olive oil in a deep pan over medium-high heat.
- Add chicken pieces, season with salt, pepper, and garlic powder, and cook until golden and fully cooked.
- Deglaze the pan with chicken broth, scraping up any bits from the bottom.
- Add gnocchi and cook for 3-4 minutes, stirring frequently.
- Reduce heat to very low; if necessary, add more broth to prevent sticking.
- In a small bowl, whisk eggs and Parmesan cheese; season with salt and pepper.
- Slowly pour the egg mixture over the gnocchi while stirring continuously to form a creamy sauce.
- Remove from heat and serve immediately, garnished with additional Parmesan cheese if desired.
