Description

A delicious creamy gnocchi dish loaded with flavors and tender chicken, perfect for family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • ½ teaspoon garlic powder
  • Kosher salt and pepper, to taste
  • 1 ½ cups chicken broth/stock
  • 16 ounces fresh gnocchi
  • 2 large eggs, room temperature
  • Âľ cup finely grated Parmesan cheese

Instructions

  1. Heat olive oil in a deep pan over medium-high heat and add chicken pieces, seasoning with salt, pepper, and garlic powder. Cook until golden and fully cooked.
  2. Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom.
  3. Add fresh gnocchi and cook for 3-4 minutes, stirring frequently.
  4. Reduce the heat to low. If necessary, add extra broth if the mixture appears too dry.
  5. Whisk eggs and Parmesan cheese together with salt and pepper in a small bowl and pour over the gnocchi. Stir continuously over low heat until a creamy sauce forms.
  6. Remove from heat and serve immediately, adding more Parmesan cheese on top if desired.

Notes
