Description
A delightful and quick recipe for creamy garlic salmon with spinach and sun-dried tomatoes, perfect for busy weeknights.
Ingredients
Scale
- 2 salmon fillets
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes
- 1 cup spinach
- 1 cup heavy cream
- 2 tablespoons butter
Instructions
- Sear the salmon: Start by heating the butter in a pan over medium heat. Once melted, add the salmon fillets. Cook them for about 4-5 minutes on each side until they are crispy and golden brown. Remove from the pan and set aside.
- Sauté the aromatics: In the same pan, add the minced garlic. Sauté for about 30 seconds until it is fragrant. Then, add the sun-dried tomatoes and spinach. Cook for another 2-3 minutes until the spinach wilts.
- Create the creamy sauce: Pour in the heavy cream and stir everything together. Allow it to simmer for about 5 minutes. This will thicken the sauce and blend the flavors.
- Combine and serve: Return the salmon to the pan, spoon some sauce over it, and let it warm through for a minute. Serve this creamy garlic salmon over pasta or rice for a complete meal!
Notes
Watch the heat to ensure the salmon is crispy on the outside but tender inside. Don’t overcook the spinach to maintain texture and color.
