  • 20 oz cheese tortellini
  • 1 cup shredded Gruyère cheese
  • Fresh parsley or thyme, for garnish (optional)

Instructions

  1. In a large skillet, heat the butter and olive oil over medium-low heat.
  2. Add the onions, salt, and sugar. Cook for 20-25 minutes, stirring frequently, until the onions are golden and caramelized.
  3. Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
  4. Sprinkle flour over the onions and stir well. Cook for 1 more minute.
  5. Deglaze the pan with white wine, scraping up any browned bits. Simmer for 2 minutes.
  6. Pour in the broth and bring it to a gentle simmer.
  7. Add the heavy cream and black pepper. Simmer for 3-4 minutes to thicken slightly.
  8. Stir in the tortellini and cook according to package instructions (usually 4-5 minutes).
  9. Once the tortellini is tender, stir in the shredded Gruyère until melted and creamy.
  10. Garnish with fresh herbs and serve immediately.
