- 2 large yellow onions, thinly sliced
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 3 cloves garlic, minced

- 1 tablespoon all-purpose flour
- 1/2 cup dry white wine
- 2 cups low-sodium beef or vegetable broth
- 1 cup heavy cream
- 1/2 teaspoon black pepper
- 20 oz cheese tortellini
- 1 cup shredded Gruyère cheese
- Fresh parsley or thyme, for garnish (optional)
Instructions
- In a large skillet, heat the butter and olive oil over medium-low heat.
- Add the onions, salt, and sugar. Cook for 20-25 minutes, stirring frequently, until the onions are golden and caramelized.
- Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.
- Sprinkle flour over the onions and stir well. Cook for 1 more minute.
- Deglaze the pan with white wine, scraping up any browned bits. Simmer for 2 minutes.
- Pour in the broth and bring it to a gentle simmer.
- Add the heavy cream and black pepper. Simmer for 3-4 minutes to thicken slightly.
- Stir in the tortellini and cook according to package instructions (usually 4-5 minutes).
- Once the tortellini is tender, stir in the shredded Gruyère until melted and creamy.
- Garnish with fresh herbs and serve immediately.
