Ingredients

- 2 cans (7 oz each) whole green chiles, drained and split
- 2 cups shredded Monterey Jack or Pepper Jack cheese
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1½ cups whole milk
- ½ cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 350°F and grease a 9×13 baking dish.
- Lay half of the green chiles evenly in the baking dish.
- Sprinkle half of the shredded cheeses over the chiles.
- Add the remaining chiles, then top with the rest of the cheese.
- Whisk the eggs, milk, flour, baking powder, salt, and pepper until smooth.
- Pour the mixture evenly over the layers and bake uncovered for 40–45 minutes.
- Let rest for 10 minutes before slicing.
Notes
Pat chiles dry to avoid excess moisture. Resting helps the casserole slice cleanly.
