Description

A comforting and cheesy casserole featuring layers of green chiles and three types of cheese, perfect for any meal.


Ingredients

  • 2 cans (7 oz each) whole green chiles, drained and split
  • 2 cups shredded Monterey Jack or Pepper Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1½ cups whole milk
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 baking dish.
  2. Lay half of the green chiles evenly in the baking dish.
  3. Sprinkle half of the shredded cheeses over the chiles.
  4. Add the remaining chiles, then top with the rest of the cheese.
  5. Whisk the eggs, milk, flour, baking powder, salt, and pepper until smooth.
  6. Pour the mixture evenly over the layers and bake uncovered for 40–45 minutes.
  7. Let rest for 10 minutes before slicing.

Notes

Pat chiles dry to avoid excess moisture. Resting helps the casserole slice cleanly.
