A comforting and quick pasta dish that combines tender chicken, vegetables, and a rich cream sauce topped with a golden puff pastry crust.

- 12 oz penne pasta
- 3 tbsp unsalted butter
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
- Puff pastry (for topping)
Instructions
- Cook the penne pasta according to package instructions, then drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery; sauté until softened.
- Stir in the garlic powder and thyme. Add the shredded chicken and frozen peas.
- Pour in the chicken broth and heavy cream, and bring to a simmer. Season with salt and pepper.
- Combine the cooked pasta with the sauce mixture in the skillet.
- Transfer the mixture to a baking dish and top with puff pastry.
- Bake in a preheated oven at 400°F (200°C) until the pastry is golden brown, about 20-25 minutes.
- Let it cool for a few minutes before serving.
Notes
For a faster option, bake smaller portions in ramekins. You can also use rotisserie chicken for convenience.
