Description

A comforting and quick pasta dish that combines tender chicken, vegetables, and a rich cream sauce topped with a golden puff pastry crust.


Ingredients

  • 12 oz penne pasta
  • 3 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Puff pastry (for topping)

Instructions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery; sauté until softened.
  3. Stir in the garlic powder and thyme. Add the shredded chicken and frozen peas.
  4. Pour in the chicken broth and heavy cream, and bring to a simmer. Season with salt and pepper.
  5. Combine the cooked pasta with the sauce mixture in the skillet.
  6. Transfer the mixture to a baking dish and top with puff pastry.
  7. Bake in a preheated oven at 400°F (200°C) until the pastry is golden brown, about 20-25 minutes.
  8. Let it cool for a few minutes before serving.

Notes

For a faster option, bake smaller portions in ramekins. You can also use rotisserie chicken for convenience.
