Description

Ingredients

  • 3 cups shredded cooked chicken
  • 1 small onion, diced (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • ½ cup shredded cheese
  • Soft tortillas
  • Green chile sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the shredded chicken, diced onion (if using), garlic powder, cumin, salt, and pepper. Mix well to ensure the spices are evenly distributed.
  3. Take a tortilla and place a portion of the chicken mixture and some shredded cheese in the center. Roll it up tightly.
  4. Place the rolled tortillas in a baking dish, seam side down, arranged closely together for even heating.
  5. Pour the green chile sauce over the top of the rolled tortillas.
  6. Sprinkle the remaining cheese on top of the sauce.
  7. Bake for about 25-30 minutes until the enchiladas are heated through and the cheese is bubbly and golden.
  8. Serve warm and enjoy!

Notes

These enchiladas can be made ahead of time and stored in the refrigerator. To reheat, bake in the oven until warmed through.
