- 3 cups shredded cooked chicken
- 1 small onion, diced (optional)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- ½ cup shredded cheese
- Soft tortillas
- Green chile sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the shredded chicken, diced onion (if using), garlic powder, cumin, salt, and pepper. Mix well to ensure the spices are evenly distributed.
- Take a tortilla and place a portion of the chicken mixture and some shredded cheese in the center. Roll it up tightly.
- Place the rolled tortillas in a baking dish, seam side down, arranged closely together for even heating.
- Pour the green chile sauce over the top of the rolled tortillas.
- Sprinkle the remaining cheese on top of the sauce.
- Bake for about 25-30 minutes until the enchiladas are heated through and the cheese is bubbly and golden.
- Serve warm and enjoy!
Notes
These enchiladas can be made ahead of time and stored in the refrigerator. To reheat, bake in the oven until warmed through.
