- 13 oz. andouille sausage links, sliced into medallions
- 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
- ½ medium red bell pepper, sliced
- ½ medium yellow bell pepper, sliced
- 3 large garlic cloves, minced
- 12 oz. gluten-free penne pasta
- ½ cup canned, diced fire-roasted tomatoes
- 3 ½ cups chicken broth
- 2 tablespoons Cajun seasoning mix
- 7 oz. cream cheese
- Salt to taste
- Fresh Italian parsley, finely chopped
- Red pepper flakes
Instructions
- Add the sliced sausage to a large skillet over medium heat and sear until crispy, about 4 minutes. Remove and set aside.
- In the same skillet, sauté the mushrooms, bell peppers, and garlic in the rendered fat for about 3 minutes.
- Stir in the gluten-free penne, fire-roasted tomatoes, chicken broth, and Cajun seasoning. Bring to a boil and cover.
- Reduce heat to medium, simmer uncovered for 12-15 minutes until pasta is al dente.
- Add cream cheese to the skillet and stir until melted and creamy.
- Return the sausage to the skillet, season with salt, and garnish with parsley and red pepper flakes. Serve immediately.
