A quick and delicious pasta dish combining spicy Cajun flavors with creamy goodness, perfect for busy weeknights and special occasions.


Ingredients

  • 13 oz. andouille sausage links, sliced into medallions
  • 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
  • ½ medium red bell pepper, sliced
  • ½ medium yellow bell pepper, sliced
  • 3 large garlic cloves, minced
  • 12 oz. gluten-free penne pasta
  • ½ cup canned, diced fire-roasted tomatoes
  • 3 ½ cups chicken broth
  • 2 tablespoons Cajun seasoning mix
  • 7 oz. cream cheese
  • Salt to taste
  • Fresh Italian parsley, finely chopped
  • Red pepper flakes

Instructions

  1. Add the sliced sausage to a large skillet over medium heat and sear until crispy, about 4 minutes. Remove and set aside.
  2. In the same skillet, sauté the mushrooms, bell peppers, and garlic in the rendered fat for about 3 minutes.
  3. Stir in the gluten-free penne, fire-roasted tomatoes, chicken broth, and Cajun seasoning. Bring to a boil and cover.
  4. Reduce heat to medium, simmer uncovered for 12-15 minutes until pasta is al dente.
  5. Add cream cheese to the skillet and stir until melted and creamy.
  6. Return the sausage to the skillet, season with salt, and garnish with parsley and red pepper flakes. Serve immediately.
