A quick and delicious dish featuring a creamy sauce with smoked sausage and vibrant Cajun spices, perfect for weeknight dinners.

- 8 oz (225 g) penne or rigatoni pasta
- 1 tbsp olive oil
- 12 oz (340 g) smoked sausage, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 ½ cups heavy cream
- ½ cup chicken broth
- 1 tbsp Cajun seasoning
- ½ tsp paprika
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package directions, adding a pinch of salt. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 5–7 minutes. Remove and set aside.
- Add onion, garlic, and bell pepper to the skillet. Sauté for 3–4 minutes until softened.
- Stir in Cajun seasoning and paprika. Pour in heavy cream and chicken broth, simmer for 5 minutes.
- Add Parmesan cheese, stirring until melted and sauce thickens.
- Return sausage and pasta to the skillet, tossing until coated with the sauce.
- Season with salt and pepper, garnish with parsley, and serve hot.
Notes
For a spicy kick, add red pepper flakes or use spicy sausage. Feel free to include more vegetables for added nutrition.
