Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp Cajun seasoning (divided)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)
  • 1/2 cup diced yellow onion
  • 4 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with 1.5 tbsp of Cajun seasoning, salt, and black pepper.
  2. Cook the chicken: Heat olive oil and 1 tbsp of butter in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, or until they turn golden and are cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. Make the sauce: In the same skillet, melt the remaining 1 tbsp of butter over medium heat. Add the diced onion and cook until it becomes soft, which should take about 3-4 minutes. Next, add the minced garlic and cook for an additional minute until it is fragrant.
  4. Deglaze the pan: Pour in the chicken broth to deglaze the skillet, scraping up any browned bits from the bottom. Bring the mixture to a simmer.
  5. Add cream and seasoning: Reduce the heat to medium-low. Stir in the heavy cream and the remaining 0.5 tbsp of Cajun seasoning. Allow the sauce to simmer for 2-3 minutes, letting it thicken slightly.
  6. Finish the dish: Remove the skillet from the heat and stir in the grated Parmesan cheese until the sauce becomes smooth and creamy. Return the chicken to the skillet, spooning the sauce over the top.
  7. Garnish and serve: Sprinkle the chicken with fresh parsley and serve immediately. Enjoy your creamy Cajun chicken meal!
