- 1 1/2 lbs broccoli, stems included
- 2 tablespoons olive oil (or butter, or ghee)
- 1 large white or yellow onion, diced
- 6–8 garlic cloves, rough chopped
- 3 cups veggie broth or chicken stock, divided
- 1 cup almond milk (or soy milk, cashew milk, oat milk, whole milk, or half-and-half)
- 1 cup fresh basil (packed)
- Optional: a handful of baby spinach
- 1 teaspoon salt
- Pepper to taste
- Pinch cayenne
- 1/4 cup plain yogurt or sour cream (or vegan sour cream)
- Squeeze of lemon
- Optional: 1-2 teaspoons white miso paste
Instructions
- Prep the broccoli by tearing the florets into small pieces and thinly slicing the crunchy stems.
- In a large pot, heat olive oil over medium heat, then sauté diced onion and chopped garlic until golden, about 4-5 minutes.
- Add the broccoli stems and broth, bring to a boil. Cover, lower heat, and let simmer for 3-4 minutes.
- Add broccoli florets to the broth, cover, and steam until fork-tender, about 5 minutes.
- Blend half of the almond milk and fresh basil into the soup until smooth.
- Return blended soup to pot, whisk in salt, pepper, cayenne, and yogurt or sour cream, then warm gently.
- Finish by adding a squeeze of lemon before serving.
Notes
Don’t overcook the broccoli to maintain its vibrant color and nutrition. Taste as you go to adjust seasonings.
