Description

A delightful and healthy Creamy Broccoli Soup that brings comforting flavors and rich nutrition to your table.


Ingredients

  • 1 1/2 lbs broccoli, stems included
  • 2 tablespoons olive oil (or butter, or ghee)
  • 1 large white or yellow onion, diced
  • 68 garlic cloves, rough chopped
  • 3 cups veggie broth or chicken stock, divided
  • 1 cup almond milk (or soy milk, cashew milk, oat milk, whole milk, or half-and-half)
  • 1 cup fresh basil (packed)
  • Optional: a handful of baby spinach
  • 1 teaspoon salt
  • Pepper to taste
  • Pinch cayenne
  • 1/4 cup plain yogurt or sour cream (or vegan sour cream)
  • Squeeze of lemon
  • Optional: 1-2 teaspoons white miso paste

Instructions

  1. Prep the broccoli by tearing the florets into small pieces and thinly slicing the crunchy stems.
  2. In a large pot, heat olive oil over medium heat, then sauté diced onion and chopped garlic until golden, about 4-5 minutes.
  3. Add the broccoli stems and broth, bring to a boil. Cover, lower heat, and let simmer for 3-4 minutes.
  4. Add broccoli florets to the broth, cover, and steam until fork-tender, about 5 minutes.
  5. Blend half of the almond milk and fresh basil into the soup until smooth.
  6. Return blended soup to pot, whisk in salt, pepper, cayenne, and yogurt or sour cream, then warm gently.
  7. Finish by adding a squeeze of lemon before serving.

Notes

Don’t overcook the broccoli to maintain its vibrant color and nutrition. Taste as you go to adjust seasonings.
