- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 3 cups vegetable broth
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Optional: grated cheese for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-5 minutes.
- Add the broccoli florets and vegetable broth. Bring to a boil.
- Reduce heat and let simmer until the broccoli is tender, about 10-15 minutes.
- Use an immersion blender to puree the soup until smooth and creamy.
- Stir in the heavy cream or coconut milk. Season with salt and pepper to taste.
- Serve warm, optionally topped with grated cheese.
Notes
Use frozen broccoli if fresh is unavailable; just reduce cooking time slightly. For a vegan version, substitute heavy cream with coconut milk or non-dairy milk.
