Ingredients

  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 3 cups vegetable broth

  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-5 minutes.
  3. Add the broccoli florets and vegetable broth. Bring to a boil.
  4. Reduce heat and let simmer until the broccoli is tender, about 10-15 minutes.
  5. Use an immersion blender to puree the soup until smooth and creamy.
