Description

A delightful salad combining broccoli, cauliflower, and corn with a smooth, creamy dressing, perfect for any occasion.


Ingredients

  • 2 cups fresh broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sweet corn (fresh or canned, drained)
  • ½ cup red onion (finely diced)
  • ½ cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the broccoli and cauliflower under cold water and cut them into bite-sized florets.
  2. If using fresh corn, boil it for about 3 minutes until tender. If using canned corn, drain it well.
  3. Finely dice the red onion.
  4. In a large bowl, combine the broccoli, cauliflower, corn, and red onion. Toss gently to mix.
  5. In a small bowl, whisk together the mayonnaise, Dijon mustard, sugar, salt, and pepper to create the dressing.
  6. Pour the dressing over the vegetable mix and stir until everything is well coated.
  7. Chill the salad in the fridge for at least an hour before serving.
