Description

This Creamy Boursin Shrimp Pasta combines rich flavors with simple techniques to create a delightful meal that impresses.


Ingredients

  • 8 oz penne or rotini pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound medium shrimp, peeled and deveined
  • 4 oz Boursin cheese (Garlic & Fine Herbs)
  • ¼ cup heavy cream (optional)
  • ¼ cup reserved pasta water
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente, about 8-10 minutes. Reserve ¼ cup of pasta water, then drain the pasta.
  2. Heat olive oil and butter in a skillet over medium heat. Add shrimp in a single layer and cook for 1-2 minutes per side until opaque. Transfer shrimp to a plate and set aside.
  3. Lower the heat and add minced garlic to the skillet, cooking for about 30 seconds until fragrant.
  4. Add Boursin cheese and reserved pasta water to the skillet, stirring until the cheese melts into a smooth sauce. If using heavy cream, add it now and stir until well combined.
  5. Add the cooked pasta to the skillet and toss gently until evenly coated in the creamy sauce.
  6. Return the shrimp to the skillet for 1 minute to warm through. Season with salt and pepper and garnish with fresh parsley before serving.

Notes

Avoid overcooking the shrimp, and always reserve pasta water to help thin out the sauce if needed.
