Ingredients

  • 4 medium potatoes (about 2 pounds), diced into ½-inch cubes
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup corn, fresh, frozen, or canned (drained if canned)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the beef sausage and cook until browned. Remove the sausage from the pot, leaving about 1 tablespoon of fat in the pot.
  2. Add the diced onion and cook until softened, about 5-6 minutes. Then, add the minced garlic and cook for 1 minute until fragrant.
  3. Add the diced potatoes to the pot and cook for 2-3 minutes.
  4. Pour in the chicken or vegetable broth, ensuring the potatoes are well covered. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 15-20 minutes until the potatoes are tender.
  5. Once the potatoes are cooked, pour in the heavy cream and stir gently. Let the chowder simmer uncovered for 5 minutes until it slightly thickens.
  6. Add the corn and cook for an additional 2-3 minutes until heated through.
  7. Add the cooked beef sausage back to the pot. Stir gently and let it simmer for another 2-3 minutes to ensure the sausage warms up and the flavors combine.
  8. Season with salt and pepper to taste. Adjust seasoning and thickness as desired before serving.
