- 1 tablespoon olive oil
- 1 pound ground Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups chicken broth
- 8 ounces lasagna noodles, broken into pieces
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Extra Parmesan cheese (for serving)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the ground Italian sausage and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes.
- Add the diced onion to the pot and cook for another 3-4 minutes, until the onion is translucent.
- Stir in the minced garlic, dried basil, dried oregano, and red pepper flakes (if using). Cook for about 1 minute until fragrant.
- Pour in the can of diced tomatoes (with their juices) and the chicken broth. Bring the mixture to a boil.
- Once boiling, add the broken lasagna noodles into the pot. Reduce the heat to a simmer and cook for approximately 10-12 minutes, or until the noodles are tender.
- Stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Adjust any seasonings if necessary.
- Serve the soup hot, garnished with fresh parsley and additional Parmesan cheese if desired.
Notes
This soup can be customized by adding vegetables or using different types of cheese. It can also be made ahead of time and tastes even better the next day.
