- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup fresh or frozen cranberries
- 1 cup orange juice (freshly squeezed if possible)
- Zest of 1 orange
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 tablespoon soy sauce
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a large, oven-safe skillet, heat the olive oil over medium heat.
- Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add cranberries, orange juice, orange zest, honey, garlic powder, thyme, and soy sauce. Cook for about 5 minutes until the cranberries burst and the sauce thickens slightly.
- Return the seared chicken to the skillet, coating it in the sauce.
- Transfer to the oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
- Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
