Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice (freshly squeezed if possible)
  • Zest of 1 orange
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large, oven-safe skillet, heat the olive oil over medium heat.
  4. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove and set aside.
  5. In the same skillet, add cranberries, orange juice, orange zest, honey, garlic powder, thyme, and soy sauce. Cook for about 5 minutes until the cranberries burst and the sauce thickens slightly.
  6. Return the seared chicken to the skillet, coating it in the sauce.
  7. Transfer to the oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  8. Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
