- 4 chicken breasts or thighs, boneless and skinless
- 1 cup fresh cranberries
- 1 large orange, zested and juiced
- 2 tablespoons honey or maple syrup
- 1 tablespoon olive oil
- 2 garlic cloves, finely chopped
- 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
- Salt and black pepper to taste
- 1/2 cup chicken broth or water
- 1 tablespoon balsamic vinegar (optional)
- 1 teaspoon Dijon mustard (optional)
Instructions
- Rub the chicken with salt, black pepper, and herbs. Let rest.
- Heat olive oil in a large pan over medium heat and cook chicken for 4-6 minutes per side until golden brown. Set aside.
- In the same pan, cook garlic until fragrant. Add cranberries, orange juice, zest, and honey. Simmer until cranberries burst.
- Return chicken to the pan, add broth, deglaze the pan, and cover. Cook until chicken reaches 165°F.
- Drizzle chicken with sauce before serving and garnish as desired.
