Description

Ingredients

  • 4 chicken breasts or thighs, boneless and skinless
  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth or water
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Rub the chicken with salt, black pepper, and herbs. Let rest.
  2. Heat olive oil in a large pan over medium heat and cook chicken for 4-6 minutes per side until golden brown. Set aside.
  3. In the same pan, cook garlic until fragrant. Add cranberries, orange juice, zest, and honey. Simmer until cranberries burst.
  4. Return chicken to the pan, add broth, deglaze the pan, and cover. Cook until chicken reaches 165°F.
  5. Drizzle chicken with sauce before serving and garnish as desired.
