Description

A rich, creamy cheesecake layered with tart cranberry jam and topped with light white chocolate mousse, perfect for holidays and special occasions.


Ingredients

  • Crust:
    • 1 ½ cups graham cracker crumbs
    • ½ cup melted butter
    • ¼ cup sugar
  • Cranberry Jam:
    • 2 cups cranberries (fresh or frozen)
    • 1 cup sugar
    • ½ cup water
    • Zest of 1 orange
  • Cheesecake Filling:
    • 16 oz cream cheese
    • ½ cup sugar
    • 1 cup sour cream
    • 3 large eggs
    • 1 tsp vanilla extract
  • White Chocolate Mousse:
    • 8 oz white chocolate
    • 1 cup heavy cream
  • Optional:
    • Sugared cranberries

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs with melted butter and sugar. Press firmly into the bottom of your pan.
  2. Cook the Cranberry Jam: Warm cranberries, sugar, water, and orange zest in a saucepan until berries burst and mixture thickens. Let cool.
  3. Mix the Filling: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix in eggs gently until combined.
  4. Assemble the Cheesecake: Spread a thin layer of jam on the crust. Pour filling on top and smooth the surface.
  5. Bake the Cheesecake: Bake at 325°F (163°C) until set on edges and slightly soft in the center. Cool slowly.
  6. Prepare the Mousse: Melt the white chocolate. Whip cream until soft peaks form. Fold together gently.
  7. Chill and Serve: Spread mousse on top of the cooled cheesecake. Chill for at least 6 hours before slicing.
