- Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
- Cranberry Jam:
- 2 cups cranberries (fresh or frozen)
- 1 cup sugar
- ½ cup water
- Zest of 1 orange
- Cheesecake Filling:
- 16 oz cream cheese
- ½ cup sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- White Chocolate Mousse:
- 8 oz white chocolate
- 1 cup heavy cream
- Optional:
- Sugared cranberries
Instructions
- Prepare the Crust: Combine graham cracker crumbs with melted butter and sugar. Press firmly into the bottom of your pan.
- Cook the Cranberry Jam: Warm cranberries, sugar, water, and orange zest in a saucepan until berries burst and mixture thickens. Let cool.
- Mix the Filling: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix in eggs gently until combined.
- Assemble the Cheesecake: Spread a thin layer of jam on the crust. Pour filling on top and smooth the surface.
- Bake the Cheesecake: Bake at 325°F (163°C) until set on edges and slightly soft in the center. Cool slowly.
- Prepare the Mousse: Melt the white chocolate. Whip cream until soft peaks form. Fold together gently.
- Chill and Serve: Spread mousse on top of the cooled cheesecake. Chill for at least 6 hours before slicing.
Notes
Cooling time is important; rushing can cause the cake to crack or weep.
