A delicious mixture of warm cheese and tart cranberries stuffed into chicken breasts, perfect for weeknight dinners or special occasions.

- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1 teaspoon kosher salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 4 ounces creamy brie cheese
- 1 cup fresh cranberries or cranberry sauce
- 2 tablespoons olive oil
- 1/4 cup balsamic glaze
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, smoked paprika, and garlic powder.
- Carefully cut a pocket into each chicken breast and stuff with brie cheese and cranberries.
- In a skillet, heat olive oil over medium-high heat.
- Sear the chicken breasts for 4-5 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and drizzle with balsamic glaze.
- Bake in the oven for about 25-30 minutes or until the chicken is cooked through.
- Serve warm, garnished with additional cranberries if desired.
Notes
For a less tart filling, mix cranberries with a little sugar. Let the chicken rest for 5 minutes after baking to retain juices.
