Description

A delicious mixture of warm cheese and tart cranberries stuffed into chicken breasts, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts (6–8 oz each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 4 ounces creamy brie cheese
  • 1 cup fresh cranberries or cranberry sauce
  • 2 tablespoons olive oil
  • 1/4 cup balsamic glaze

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, smoked paprika, and garlic powder.
  3. Carefully cut a pocket into each chicken breast and stuff with brie cheese and cranberries.
  4. In a skillet, heat olive oil over medium-high heat.
  5. Sear the chicken breasts for 4-5 minutes on each side until golden brown.
  6. Transfer the seared chicken to a baking dish and drizzle with balsamic glaze.
  7. Bake in the oven for about 25-30 minutes or until the chicken is cooked through.
  8. Serve warm, garnished with additional cranberries if desired.

Notes

For a less tart filling, mix cranberries with a little sugar. Let the chicken rest for 5 minutes after baking to retain juices.
